Protein Cheddar Breakfast Casserole - Gluten Free

Ingredients
8 ounces protein of choice (chorizo, sausage OR smoked turkey sausage)
1 cup diced shallot (onion)
1 medium green bell pepper, chopped
6 eggs, lightly beaten
¾ cup low-fat buttermilk
½ teaspoon salt
½ teaspoon black pepper
1 cup shredded cheddar cheese
¼ cup chopped fresh herbs of choice (cilantro, fresh thyme, fresh basil, or fresh rosemary)
½ sour cream (optional)
1 medium chopped tomato (optional)
Instructions:
Preheat Oven to 350° - rub 8-9 inch square baking dish with softened margarine or butter
Place a large skillet on medium heat and add your choice of protein (chorizo or sausage); cook for 4 minutes until browned. Drain the fat.
Add chopped onion and bell pepper to the skillet; cook and stir for 6 minutes or until they are crisp-tender. Evenly spread the mixture in the prepared baking dish.
In separate bowl, mix together the eggs, baking mix, buttermilk, salt, and black pepper (or other herbs) until well combined. Pour this mixture evenly over the protein mixture.
Bake for 45-50 minutes or until a knife inserted in the center comes out clean. Evenly sprinkle with cheese and your choice of fresh herbs. Let it stand for 10 minutes or until the cheese has melted. Serve with sour cream and tomato, if desired, and enjoy!
