Butternut Squash Pasta

My current comfort meal — Butternut Squash Pasta!
Squash:
Cook your squash at 425° for 1.5hrs
Seasoning to your liking, I use:
Fresh thyme
Himalayan Salt
Onion Powder
Garlic Powder
Herbs de Provence
Remove your squash and drop into your blender - add water as needed and blend until you have a puree
Add to a pot and simmer while you begin to cook your pasta of choice > Use any noodle type of your liking! I switch it up, often. My favorites are Rigatoni or Cavatappi.
Add these seasonings to your squash mixture once again plus some new ingredients to your liking:
Fresh thyme
Himalayan Salt
Onion Powder
Garlic Powder
Herbs de Provence
Quality Parmesan - I buy a block and grate
Pesto (A little goes a long way)
Fresh chopped Basil
Once your pasta is finished, add to a bowl and top off with your squash sauce. Add more parmesan and fresh thyme to your liking and ENJOY!
